  • 3-4 carrots, sliced into thick rounds
  • 4-6 potatoes (optional), cut into large pieces
  • 3-4 bay leaves
  • 5-6 black peppercorns
  • 2-3 tsp salt
  • Water (enough to just cover the meat)

Optional Seasonings

  • Allspice berries (for a deeper flavor)
  • Fresh herbs like thyme or parsley (for garnish)

  • A heavy cast iron pot or Dutch oven with a lid

Instructions

  1. Prepare the Meat

    • Cut the beef and pork into evenly sized chunks to ensure even cooking.
  2. Layer the Ingredients

    • Arrange the meat in layers in the pot, alternating with onions, carrots, and optionally, potatoes.
