Hernekeitto (Finnish Pea Soup) is a traditional Finnish dish often served on Thursdays, typically accompanied by rye bread and mustard. This hearty soup, made with dried peas and pork, is comforting and rich in flavor. Here's how to make it:

Ingredients

Serves 4-6:

  • 500 g (2 1/2 cups) dried yellow peas
  • 1-1.5 liters (4-6 cups) water (plus extra for soaking)
  • 400-500 g (14-17 oz) smoked pork or ham hock
  • 1-2 onions, finely chopped
  • 1-2 tsp salt (to taste)
  • 1/2 tsp black pepper
  • 1 tsp dried marjoram (optional)
  • Mustard (optional, for serving)

Instructions

  1. Soak the Peas

    • Rinse the dried peas under cold water. Place them in a large bowl and cover with plenty of water. Let them soak overnight (8-12 hours).
  2. Prepare the Soup Base

    • Drain and rinse the soaked peas. Place them in a large pot with 1-1.5 liters of fresh water.
  3. Add the Pork

    • Add the smoked pork or ham hock to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer. Skim off any foam that rises to the surface.
  4. Cook the Soup

    • Simmer the soup for 1.5-2 hours, stirring occasionally to prevent the peas from sticking. Add more water if needed to maintain the desired consistency.
  5. Add Onion and Seasonings

    • Stir in the chopped onions, salt, pepper, and marjoram (if using). Simmer for another 30 minutes, or until the peas are soft and the flavors are well combined.
  6. Serve

    • Remove the pork or ham hock from the soup. Shred the meat and return it to the pot, discarding any bones. Serve the soup hot, with mustard on the side if desired. Rye bread makes an excellent accompaniment.

Tips

  • For a vegetarian version, skip the pork and use vegetable stock instead. You can add smoked paprika for a similar smoky flavor.
